Sundanese Dishes You Have to Try in Bogor

West Java is Sunda land, and Sundanese cooking is some of the freshest, most vegetable-forward food in Indonesia. It is built on raw herbs, grilled fish, coconut and fierce sambal, and Bogor is a perfect place to learn it. Here is what to order on your first few meals.

Start with lalapan and sambal

Every Sundanese meal centres on lalapan, a plate of raw and blanched vegetables, cucumber, long beans, cabbage, basil, eaten with sambal terasi, a pounded chilli and shrimp-paste relish. It sounds simple; it is the soul of the cuisine. Do not treat it as garnish. Wrap a leaf around a bite of rice and fish and you have understood Sunda.

The dishes to know

A few plates show up again and again, and each is worth ordering at least once. Portions are generous and prices are gentle, most of these run Rp20,000 to Rp45,000 at a good warung.

  • Nasi timbel, warm rice steamed in banana leaf with fried chicken, tofu, tempe and sambal
  • Karedok, a raw-vegetable salad in spicy peanut sauce, the cool cousin of gado-gado

  • Ikan bakar or gurame goreng, grilled or crisp-fried freshwater fish
  • Sayur asem, a sour-tamarind vegetable soup that resets your palate

For the full experience, find a rumah makan Sunda with lesehan seating, low tables where you sit on woven mats, ideally with a view of rice fields or a fish pond on the city's edge. These places are made for slow, shared, hands-on eating. Wash your right hand, skip the cutlery, and eat with your fingers the way it is meant to be done.

Drink like a local

Cut the chilli heat with es cincau, grass jelly over ice, or a glass of teh tawar hangat, plain warm tea, which Sundanese diners swear balances a heavy meal. For dessert, look for kolak or a slice of peuyeum, fermented cassava that is oddly wonderful.

In Sunda, the vegetables are the main event and the chilli is the conversation. Eat slowly and let your mouth catch up.
